Alphonso has a rich, creamy texture and an intense sweet-floral aroma - often called the king of mangoes. Kesar has a saffron-yellow flesh with a slightly spicier, more aromatic flavour profile. Both are premium Indian varieties. Alphonso tends to be pricier due to shorter availability and higher demand.
Chickoo (Sapodilla) tastes like a mix of brown sugar, pear, and caramel. It has a soft, grainy texture similar to a ripe pear. Eat it fresh by cutting it in half and scooping out the flesh, or blend it into milkshakes. It is one of the most popular fruits in India, especially with children.
Cut or tear the hairy red skin along the seam - inside you will find a translucent, juicy flesh similar to lychee but sweeter and less acidic. Eat it fresh around the seed. Rambutan is best consumed within 2-3 days of delivery as it dries out quickly.
Green (raw) Mango is not a variety - it is an unripe mango used as a cooking ingredient. It has a sour, tangy flavour. Used in pickles (Aam ka Achaar), chutneys, dal, and the popular drink Aam Panna. It is not meant to be eaten as a ripe fruit.
Indian mango season runs from approximately April to June. The first to arrive are usually Badami and Alphonso, followed by Kesar. Pakistani varieties like Chaunsa and Sindhri start in May and run through August. Exact dates shift each year depending on weather and harvest conditions. Not necessarily. Many fruits are shipped slightly firm to survive transit. Leave them at room temperature for 1-3 days. To speed up ripening, place them in a paper bag with a banana. A ripe mango gives slightly when pressed and smells sweet near the stem. For Chickoo and Guava, a soft texture and fragrant smell are good signs.
Store unripe fruits at room temperature until they are ready to eat. Once ripe, move them to the fridge to extend freshness by a few days. For best flavour, take them out about 30 minutes before eating.
