Green round eggplants are a hybrid variant of this popular vegetable and are characterized by an attractive glossy colour and round shape. They are often halved or quartered, but can also be used whole and cooked in a curry sauce. They are then particularly tender and absorb the taste of the sauce.

Storage & Use:
Eggplants are not suitable for long storage and should be consumed within a few days and stored in a cool place out of direct sunlight. If they cannot be eaten within 2 days, the vegetables can be wrapped in a paper towel or perforated plastic bag and consumed within a week. The inner white pulp turns brown quickly after cutting. It should therefore be processed or cooled immediately after cutting. Eggplants are an important part of Indian curry dishes and are also used in lentil soups, stews, and rice dishes. They can be fried, grilled or baked.
