Firm and fibrous ginger roots are characterized by a light to dark brown skin. They are aromatic, spicy and pungent in taste. The aroma is intensified when the ginger is dried and diminishes when it is cooked.

Storage and Use:
Ginger is best kept chilled in a plastic bag. Storing ginger in the freezer makes it easier to peel and grate. Especially in combination with garlic, ginger is added to many spicy dishes and can even provide a pungent aroma in beverages such as tea and juices.
