Like tomatoes and potatoes, the eggplant belongs to the nightshade plant family. The club-shaped fruits can be white or dark purple in colour, as well as various colour nuances in between. Due to their high content of solanine and bitter substances, eggplants are not suitable for raw consumption, but many tasty dishes can be prepared from them.

Storage & Use:
Eggplants are not suitable for longer storage and should be used within a few days. Meanwhile, they can be kept in a cool place out of direct sunlight. The inner white pulp turns brown quickly. It should therefore be processed immediately after cutting or refrigerated temporarily. Eggplants are an important part of Indian curry dishes and can be fried, grilled or baked.
