These baby chickpeas are split and polished, resulting in a firm texture similar to kernels of sweetcorn when cooked. A versatile staple of Indian cuisine, this dal is ideal for creating fragrant stews, authentic dal dishes, and aromatic pilaf rice. Its culinary applications extend to savoury snacks like fritters and idlis, as well as traditional sweet preparations like halwa. For best results, soak the dal for one to four hours before cooking. It can be prepared in approximately 15 minutes in a pressure cooker or instant pot. Store in an airtight container in a cool, dry place to maintain its premium quality.
