These creamy white lentils offer a mild, subtle flavour that expertly absorbs the aromatics of accompanying spices, whether seasoned with ginger or traditional Indian herbs. Ideally suited for creating authentic South Indian dishes, Urid Dal is the essential ingredient for smooth batters used in crispy dosa pancakes, fluffy idlis, and savoury dahi vadas. It also adds a pleasant texture to soups, dals, and papadams, or can be used for tempering rice and chutneys to introduce a warm, nutty profile to your meals. Preparation is simple: rinse thoroughly and soak for 30 minutes to four hours before cooking. These lentils can be prepared in an instant pot in approximately 10 minutes or slow-cooked for a deeper consistency. Store in a cool, dry place in an airtight container to maintain freshness.
