Rawa Idli Mix is a traditional South Indian semolina-based blend used to prepare soft, fluffy idli with a light and delicate texture. Unlike fermented idli, rawa idli can be prepared quickly while still delivering an authentic taste. Ideal for breakfast, brunch, or light meals, it pairs perfectly with coconut chutney, sambar, or other savory accompaniments.

preparation: add 1 cup rawa mix to the ½ cup measure sour curd to form the batter and set aside for 1–2 minutes. add 1 more cup measure of sour curd to the batter and mix well. set aside for 8–10 minutes. you may add finely cut coriander leaves to the mix. grease idli plates with oil and fill with the batter. steam the batter in an idli cooker for 12–14 minutes on medium to high flame. serve hot.
