Schani’s Urid Dal, or white lentils, are a premium split and skinned version of black gram, widely used in South Asian cuisine. These authentic white lentils feature a creamy color and a mild, delicate flavor that readily absorbs the aromatic spices they are cooked with. Their culinary versatility makes them a staple for creating traditional South Indian dishes such as crispy savory dosa pancakes, papadams, idlis, and dahi vada fritters. They are also ideal for tempering savory rice, enhancing chutneys, or serving as a base for hearty soups and classic dals. For a warm, nutty profile, they can be added to homemade curries. Preparation is efficient, requiring only 8-10 minutes in an instant pot or four whistles in a pressure cooker.
